A while back I saw an ad posted on Facebook for a Kickstarter for a new company called WEDO, they were making banana flour. Yeah I never had heard of banana flour either. I thought it looked interesting enough so I signed up to help and in return, I received some flour and a reusable shopping bag. When you are gluten-free you are always looking for new flours to help make ‘bread’ like items taste more like…well… ‘bread’ like items. The first Item I tried baking with this were some gluten-free waffles.
I used the recipe from their site here (sorry, link has been deleted) but changed out the buttermilk for coconut milk (I’m dairy-free). I also added in some goji berries and by request of my daughter, chocolate chips.
They turned out great, were very tasty and the kids loved them. I was a bit worried that they would have a strong banana flavor but they really only had a small hint of it. I would say this is my favorite waffle recipe that I have tried so far. So this was a good buy and I will probably purchase some more once I finish this container. This recipe only made 3 waffles in our maker so I would suggest doubling it. If you are like me, you like to make extra to freeze 🙂
Gluten Free Waffles made with Banana Flour
Ingredients
Dry Ingredients:
- 1/3 cup Banana Flour
- 1/3 cup Rice Flour
- 2 TBSP Corn Starch
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/8 tsp Xanthan Gum
- 1 TBSP Sugar
Wet Ingredients:
- 1 cup Coconut Milk
- 2 TBSP Oil
- 1/2 tsp Vanilla
- 1 Egg
add ins –
- Chocolate chips
- Gojo Berries
Instructions
- Mix all of the dry ingredients together and add in the wet ingredients.
- Pour the mixture into the waffle maker and then add in your add ins.
Next, I think I will try one of their bread recipes.

That looks awesome, but here in Canada, we don’t always get the same products available. *sigh* I’ll have a look and see if this is available here.
