I was looking for an easy, something a little different recipe this morning for breakfast and got frustrated that I couldn’t find anything that used ingredients that I could eat…. so I just decided to make something up. Here is the easy breakfast recipe that I came up with…
I got out a pie plate, sprayed it with olive oil and started laying some ingredients. First went the hash browns, green peppers, then I scrambled the eggs and poured them on top. Sprinkled salt and pepper over the dish and then layered the slices of avocado, then a layer of bacon bits, and some grape tomatoes that were cut in half. Then some cheddar cheese and chopped basil over the top and popped it in the oven.

Easy Sunday Morning Avocado Breakfast Pie
Ingredients
- 1 1/2 cup hash browns
- 1/2 Green Pepper chopped
- 6 eggs scrambled
- 1/3 cup bacon bits
- avacado sliced
- Cherry Tomatoes halfed
- Shredded Cheddar Cheese
- salt and peper
- 2-3 fresh basil leaves
Instructions
- Layer ingredients and bake at 350 degrees for 40 minutes, until the middle of the eggs are cooked.
Now I tried to be fancy by adding some garnished avocado on top but they turned quite brown Not too pretty but delish! Anyone know if I were to spritz the avocado with lime if that would keep it from turning brown?

Avocado will turn brown when you cook it no matter what you spritz it with. Just save the avocado as a garnish after you pop it in the oven. I’ve made a similar “quiche” with brown rice as my first layer instead of hashbrowns. What would really be yummy and even more healthy would be sweet potato hashbrowns. Just might have to make that for my breakfast this morning.
oooo I would love it with sweet potatoes. Sadly I am the only one in the family that will eat them 🙁
Maybe next time I make mini ones so we can all have our favorites.
