Ingredients

  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa or rice (make sure it’s gluten-free)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella), divided
  • 1 cup chicken or vegetable broth (gluten-free)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. Sauté Filling Ingredients: Set the Instant Pot to sauté mode and add the olive oil. Once hot, add the onion and sauté until translucent. Stir in the garlic and cook for another minute. Add the ground beef or turkey and cook until browned.
