Here’s a flavorful recipe for Instant Pot Stuffed Bell Peppers, perfect for a gluten-free meal
Ingredients
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 pound ground beef or turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked quinoa or rice (make sure it’s gluten-free)
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella), divided
- 1 cup chicken or vegetable broth (gluten-free)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
