I’ve been craving for something sweet for a while now. After poking through the cabinet I found a few mixes that I had on hand, a brownie and a moose mix. I thought I could put them together and make some easy Chocolate Mousse Brownies.
I started with a Brownie mix from King Arthur for the base. The box calls for oil and I like to use Wildtree’s Butter Flavor Grapeseed Oil, It gives it just a little richer flavor and it’s dairy-free. After baking the base I let it cool and grabbed the mousse topping mix (you could also make the mousse with whipped cream and some cocoa powder). For the mix, I had to just whip up some cream and add the chocolate goodness. I made mine with coconut milk to keep it dairy-free if you go this route be sure to use the full-fat coconut milk in a can. Spread the whipped topping on top of the brownies and it’s done. These were so easy and so yummy! They look fancy but only take a little time to make and would be great for parties. Please do note that these should be eaten within a day or two, the mousse topping does make brownies a little soggy after sitting awhile.
In the photo, I drizzled a little chocolate on top then garnished it with raspberries and mint leaves.
